Creamy Emmi Le Gruyère Cheese and Broccoli Soup with Garlic Croutons
Is there anything better than a hearty broccoli gruyère soup in a big bread bowl? Topped with garlic croutons and Emmi Cheese’s Le Gruyère AOP, it’s my go-to cheese to elevate any holiday dish. Probably one of the most versatile cheeses and can be used in just about anything from sweet to savory. It’s also Switzerland-made with the same recipe for more than 900 years so it won’t disappoint. It’s an easy holiday party dish that your guests will love!
Soup Ingredients
2 cups Emmi Le Gruyère cheese (shredded)
3 tbsp butter
1 tbsp flour
1 onion
2 garlic cloves
2 cups chicken broth or veggie broth
2 bunches broccoli (coarsely chopped)
Salt and pepper to taste
1 cup cream
2 carrots ( grated)
2-4 Small Bread Bowls (optional)
Garlic Croutons Ingredients
1 Small baguette
1/4 cup olive oil
3 tbsp garlic powder
2 tsp Salt
1 tsp pepper
Soup Directions
-Heat butter over medium heat in a Dutch oven or pot.
-Finley chop and add the onion, and cook 5-6 minutes or until beginning to soften.
-Finely chop and add the garlic and flour. Stir and saute until the garlic is fragrant.
-Add the chicken or vegetable broth and the 2 heads of broccoli with some of the stem and grated carrots. Bring to a boil.
-Cover slightly, reduce heat to low and simmer 20 minutes or until all the vegetables are tender.
-Add the cream to the soup along with the Emmi Gruyère cheese.
-Salt and pepper to taste
Croutons Directions
-Preheat oven to 400 degrees.
-Cut baguette into cubes and place on baking sheet with remaining broccoli florets. Drizzle with olive oil and coat with garlic powder, salt and black pepper. Toss with hands to evenly coat bread and broccoli.
-Bake for 10-12 minutes or until golden and crispy on the outside.
-Serve the soup and top with shredded cheese , roasted broccoli florets and croutons. If using a bread bowl cut a circle in the top of bread bowl and removes some of the dough to make a bowl. Pour soup inside and and top with shredded cheese, croutons and roasted broccoli.
