Get ready for a feast of flavors with this crispy baked chicken over polenta with a shallot and garlic au jus sauce topped with crispy mushrooms.


What you’ll need!

For the chicken;
4 chicken thighs
Salt & Pepper
Garlic and herb seasoning
Olive Oil

For the polenta;
1 cup polenta
3 cups water
2 tbsp butter
2 tbsp salt

For the mushrooms;
1 cup mushrooms

For the sauce;
1.5 cups chicken stock
2 tbsp white wine
1 clove garlic
½ shallot
Salt and pepper

THEN;
1. Preheat oven to 350 degrees. Pat chicken dry with a paper towel and place on a plate. Season generously with salt, pepper and garlic + herb seasoning
2. Add 1.5 cups of water to a saucepan and bring to a boil, then add 1 cup of polenta. Lower heat to low and whisk every few minutes. As the polenta thickens, slowly add in the additional 1.5 cups of water throughout the next 45 minutes ; whisking often to ensure the polenta doesn’t clump. Add 1 tbsp of salt and 2 tbsp of butter at the end and mix in for a smooth creamy consistency.
3. Coat frying pan with olive oil and add sliced mushrooms. Stir until golden brown, about 5 minutes on medium heat. Remove mushrooms from pan and set aside. Coat pan with more oil and add in the chicken thighs skin down. Cook on medium heat until each side is golden brown, flipping once after 5 minutes.
4. Remove chicken from pan and place on a racked baking sheet. Place the baking sheet in the oven for 25- 30 minutes.
5. Mince ½ shallot and finely chop 1 clove of garlic. In the same pan used for chicken add in the shallot and garlic and cook on low heat for a minute or two, stirring constantly.
6. In the same pan, add in 1.5 cups of chicken stock and 2 tbsp white wine. Season with 2 tbsp salt and 1 tbsp pepper. Let the sauce reduce on low heat for about 20 minutes, stirring occasionally and scraping the bottom of the pan to mix in chicken remnants.
7.Remove the chicken from the oven.
8.Plate the polenta by coating bottom of plate or bowl and place chicken on top. Pour the sauce over the plate. Sprinkle mushrooms over plate and garnish with parsley
