Spicy Buffalo Chicken Sandwich
I don’t know about you, but a Spicy Buffalo Chicken Sandwich is exactly what I need to warm me up on a cold day like this. It’s comfort food at its finest.
Serving Size: 4
Fried Buffalo Chicken Sandwich
1 1/2 cup all purpose flour
1 cup buttermilk
1/4 cup Primal Kitchen No-Dairy Buffalo Sauce
5 tbsp garlic powder
2 tbsp salt
2 tbsp black pepper
2 tbsp paprika
4 tbsp onion powder
1 1/2 lbs Skinless boneless chicken thighs (4 pieces )
Oil for frying
4 brioche buns
2 tbsp butter
Spicy Mayo and Slaw
1/2 cup Mayonnaise
1/4 cup primal Buffalo sauce
1/2 cup Sliced bread and butter pickles.
1/2 small Purple cabbage thinly sliced.
2 tbsp salt for slaw
1/4 cup apple cider vinegar
1/4 cup honey
THEN;
Purple cabbage Slaw and Spicy Mayo
1.Slice the cabbage and add to a bowl.
2.Add honey, vinegar, and salt to cabbage and mix together.
3.Let sit for at least 30 minutes. Stir before serving.
Spicy Mayo
1.Mix together mayo and Primal Kitchen No-Dairy Buffalo sauce.
Chicken
1.Combine buttermilk and Primal Kitchen No-Dairy Buffalo sauce in a bowl and stir together
2.Put chicken in the flour mixture and let marinate for at least an hour. Can also be marinated overnight in the refrigerator.
3.Combine flour, paprika, salt , pepper, garlic powder, and onion powder. Mix together.
4.Dip marinated chicken into the flour mixture and coat evenly and transfer to a plate.
5.Pour oil into a large heavy dutch oven (less than half way) or skillet to a depth of 1/2-inch. Heat over medium heat until thermometer registers 350°.
6.Fry chicken until golden brown and cooked through, about 5 minutes per side. Make sure not to crowd the chicken leaving room between pieces. Transfer to a wire rack set inside a baking sheet.
7.Melt butter in a pan on low heat. Place buns face down then remove once brown.
8.Place chicken on the toasted buns then add slaw and butter pickles.
9.Spread spicy mayo over the top of the bun and place on top of rest of sandwich.
