Ingredients

1 tablespoon olive oil

1 pound lean ground beef

3 cups Mi Rancho 7th Street Organic Tortilla Chips

1 jar of Mi Rancho Organic Salsa Roja

2 cups mixed Mexican blend cheese

1/4 medium onion

1 packet of taco seasoning

Toppings (optional, to taste): diced tomatoes, cilantro, avocado, black olives, sour cream, jalapeño.

Instructions;

1.Preheat oven to 350F

2.Finely chop onions

3.Add the oil, onions and ground beef to a skillet. Cook, breaking up the meat as you go along, for 5 minutes over medium-high heat.

4.Stir in taco seasoning

5.Meanwhile, add Mi Rancho 7th Street Organic Tortilla Chips to cover the bottom of a casserole dish.

6.Remove meat from stove and completely cover chips with meat, spreading out evenly.

7.Add Mi Rancho Organic Salsa Roja on top of the meat.

8.Add another layer of chips to evenly cover again.

9.Sprinkle and evenly cover with cheese blend.

10.Place casserole dish in the oven for 15-20 minutes until cheese is melted.

11.While cooking, dice tomatoes and jalapeños, then slice avocado

12.Remove casserole dish from oven and top with tomato, olives, jalapeños, avocado and a dollop of sour cream.

13.Serve with a side of Mi Rancho Organic Salsa Roja and enjoy!
