Animal Style Burger & Fries
Double double burger and fries “animal style”, coming right up! In-N-Out is what I miss most about living in California (besides the weather), so when the craving hit, I decided it was time to make it! For those of you who aren’t familiar, “animal style” is In-N-Out’s signature combination of cheese, special sauce, and grilled onion that can be added to a burger or fries. It’s next level decedent and surprisingly easy to achieve in your own kitchen.
What you will need!
For the burger;
1lb ground beef
1 onion
Salt
Pepper
4 brioche or potato buns
4 slices American cheese
1 tomato
1 pickle
Lettuce
Olive Oil
For the fries;
1 large russet potato
4 slices American cheese
3tbsp mayo
2tbsp ketchup
1tbsp relish
Canola or vegetable oil
THEN;
1.For the grilled onions, dice one medium to large onion. Add 1 tbsp olive oil to a pan and toss in onions, stirring frequently. Season with salt and pepper. Once brown and soft, remove from the pan and place into a small bowl.
2.Roll the meat into a large meatball shape ball and then pat it with two hands to flatten into the patty shape. Season with salt and pepper.
3.Place the patties on parchment paper. Take another sheet of parchment paper and place on top of the patties. Press down on the patties with a frying pan to smash the burgers flat.
4.Add olive oil to a skillet pan and cook the patties at high heat until brown on each side. Place one slice of american cheese on top of each. Once cooked, place aside on a separate plate.
5.For the burger toppings, slice the pickle and tomato into thin slices. Take the lettuce and pick off a few pieces. Place all of the toppings on a plate.
6.Toast the brioche buns on the same pan used for the burger patties.
7.Peel potato’s and cut vertically lengthwise into thin 1/4 inch slices and then slice into thin sticks. Heat 4-5 inches of oil to 300 degrees in a heavy pot or when small bubbles begin to form in oil. You can test with one fry to make sure it is hot enough or not too hot. Add a quarter of the sticks to the oil and make sure the potatoes aren’t overcrowded. I turn the heat up a little once the fries are added and move around with the skimmer. Once golden brown turn off heat, remove the potatoes and place on a wire rack.
8.To make the sauce, mix together ketchup, mayo and relish in a medium bowl.
9. Begin piecing together the burger - start with the toasted bottom bun and add the sauce, pickles, tomato, lettuce, patty, onions and another patty before placing the top of the bun on.
10. Add the animal sauce to the cheese fries and top with onions.
