Roast Chicken
One of my favorite gifts I received for the holidays was this Staub dutch oven, it’s the perfect way to roast a whole chicken over a bed of veggies and makes the meat perfectly tender and juicy to the bones every time. It’s an irresistible (and impressive) one-pan meal your friends and family will thoroughly enjoy!
What you’ll need!
3lb whole chicken
5 large carrots
3 large onions
5 large red potatoes
1 stick of butter
3 tablespoons olive oil
Salt and pepper
*optional* 1 tbsp Herbs of Provence (includes thyme, basil, savory, fennel seeds, and lavender flower)
4 fresh Rosemary sprigs
2 bulbs of garlic roughly peeled and cut in half horizontally
6 garlic cloves, minced
1 tbsp onion powder
THEN;
1.Preheat oven to 375°
2.Rinse chicken, cleaning cavity, removing giblets and neck. Pat dry with paper towels.
3.Combine stick of room temperature butter 1 tablespoon salt and pepper. 1 tbsp dry or fresh rosemary, onion powder and 6 cloves of minced garlic. Stir together to form a paste.
4.Lather chicken skin and under where the skin is loose. Don’t cut or loosen the skin where skin does not allow.
5.Season chicken generously on the outside and inside the cavity with salt and pepper. Sprinkle with rosemary
6.Peel and chop 5 large carrots and 3 large onions
7.Quarter the potatoes.
8.Cut the tops of two bulbs of garlic in half horizontally.
9.Stuff the garlic head into the chicken cavity along with the rosemary sprigs.
10.Tie legs together with butcher string.
11.Place breast-side up into baking tray or Dutch oven. Add carrots, onions and garlic halves. Around the chicken. Drizzle with olive oil.
12.Roast for 1 hour and 20 minutes, basting half way through cooking time.
13.Turn oven up to 450 for last 10-15 minutes to brown and crisp the skin *if using a Dutch oven, remove the top.
14.Checking for doneness using a thermometer to check the internal temperature of the chicken breast. It should read 165 degrees.
15.Once fully cooked remove from oven and cover with Dutch oven lid. Let stand for 20 minutes before serving.
