Chili

Cold winter days call for big bowls of delicious chili with all the fixings to fill us up and keep us warm. You’re going to love this quick and easy recipe.


What you will need!


1 lb ground beef
1 onion
8 cloves garlic
3 tbsp chili powder
1 tbsp olive oil
2 tbsp onion powder
2 tbsp cumin powder
1 tbsp dried oregano
2 tbsp salt
1/2 tbsp black pepper
28 oz can of crushed fire roasted tomatoes
3 oz of tomato paste
15oz can of no salt added red kidney beans
24oz of beef broth

For the toppings;


1 avocado
Chili cheese Frito corn chips
1 diced jalapeño
1 bunch cilantro
1 lime
Diced onion
Grated Cheddar cheese
Sour cream

1.Dice onion and mince garlic. Coat a Dutch oven or pot with olive oil and cook for 5 minutes on medium heat until slightly brown, stirring occasionally.
2.Salt and pepper the ground beef and add to Dutch oven, mixing everything together. Cook 5 minutes until meat is brown.
3.Add beans, beef broth or stock, crushed tomatoes, tomato paste, salt, pepper and spices to the Dutch oven and stir together.
4.Cover with lid and simmer for 1 hour on low stirring ever 10 minutes.
5. Slice the avocado and lime. Grate the cheese. Chop the jalapeño, onion, and cilantro.
6.Scoop chili into bowl. Top with a dollop of sour cream and sliced avocado. Sprinkle grated cheddar cheese, chopped onion, chopped jalapeño, and cilantro over chili. Place handful of corn chips and wedge of lime on side of bowl.
