French Onion Grilled Cheese

Grilled cheese with a French onion twist, in honor of National Grilled Cheese Month! For this recipe, I'm using Emmi Le Gruyère® AOP, a traditional Swiss cheese that is the ultimate melting cheese, thanks to its luxuriously smooth texture under heat. Emmi has been using the same recipe for over 900 years and the depth of flavor was perfect for this grilled cheese.


What you’ll need!

1 (6-oz) block Emmi Le Gruyère® AOP cheese, shredded
1 loaf of rustic bread
1 large yellow onion, thinly sliced
3 tbsp butter
2 tbsp olive oil
1 tsp salt
1 tsp pepper
¼ cup beef broth
2 tsp balsamic vinegar
3 dashes of Worcestershire sauce

THEN;
Shred the Gruyère block using a grater then set it aside in a bowl.
Cut the onion into thin slices. In a saucepan, add in olive oil, sliced onions, salt and pepper. Once the onions are soft, add in 1 tbsp of butter then stir in beef broth and a few dashes of worcestershire sauce. Mix everything together and continue to let it cook on low heat for a few more minutes before adding in balsamic vinegar. Remove from heat.
Mix together the shredded Gruyère with the onion mixture.
Slice the loaf of bread into ½ inch slices. Add the Gruyère and onion mixture to one side of the bread then place the other side on top.
Heat a cast iron skillet or pan with 2 tbsp of butter and place the grilled cheese in the pan. Cook on medium heat, turning every few minutes to prevent burning. Once each side is crispy and golden brown, remove from the heat. Plate the grilled cheese and garnish with fresh rosemary or thyme as desired.
