Pan Seared Salmon

What you’ll need!
2 6oz Secret Island Salmon filets
2 large cloves of garlic
4 cups spinach
1 large lemon
2 Yukon gold potatoes
6 tbsp olive oil
1 tsp salt
1 tsp pepper
Fresh rosemary
THEN;
1.Thinly slice one clove of garlic and chop up the second clove of garlic.
2.Season the salmon with salt, pepper and the chopped garlic.
3.Drizzle 1 tbsp olive oil in a frying pan then add in the sliced garlic. Cook garlic until crisp. Lower the heat to low and add in the spinach. Cook for a few minutes, stirring constantly until the spinach begins to wilt.
4.Slice the potatoes into thin 1/4 inch slices and place them flat on a baking sheet. Slice the lemons into thin slices and add them to the sheet as well. Drizzle about 3 tbsp olive oil over potatoes/lemons then season with 1-2 tbsp salt and 1 tbsp pepper. Place pan in a 350 degrees preheated oven for 15-20 minutes until slightly brown.
5.Heat a frying pan with 2 tbsp olive oil then place the salmon skin side up, cooking for 4 minutes on high heat. Flip the salmon over and cook for another 3-4 minutes. Remove the salmon from the pan and add in a few twigs of fresh rosemary and a few lemon slices, cooking on low for a few minutes until fragrant.
6.Plate the salmon with the potatoes and spinach. Garnish with rosemary and lemon slices.
