Roasted Chicken with Florida Orange Juice
Cooking with Florida Orange Juice is as delicious as it sounds! It brings that perfect sweet citrus favor to this roasted chicken dish paired with olives, red onions, baby potatoes and fresh herbs. We love this family-friendly recipe because it’s nutrient-dense – thanks to Florida OJ, our favorite naturally sweet beverage that includes key nutrients such as vitamin C, folate, potassium, and thiamin, as well as vitamin D (in fortified juices) to help support your immune system. We feel good about serving this recipe to our family as we head back into the busy school season.
What you’ll need!
1 cup Florida Orange Juice
2 lb bone-in, skin-on chicken thighs
2 tbsp garlic powder
2 tbsp dried oregano
2 tsp sea salt
1/2 tsp paprika
1/2 tsp ground black pepper
1 cup pitted green olives
3 tsp white wine vinegar
2 medium red onions
1-2 lb baby potatoes
2 tbsp olive oil
2 garlic cloves
Fresh Mint
Fresh Parsley
Fresh Oregano
THEN;
Chop the herbs, you will need 1/4 cup chopped fresh mint, 1/6 cup chopped fresh parsley and 1/8 cup chopped fresh oregano.
Add chopped fresh herbs, 1/2 cup Florida Orange Juice, white wine vinegar and pitted green olives into a bowl to marinate.
In a small pot, boil the baby potatoes for 10 minutes (or until slightly soft).
Place the chicken on a baking sheet lined with parchment paper skin side down. Mix together paprika, garlic powder and dried oregano into a small bowl. Season the chicken with the half of the spice mix along with salt and pepper. Place in a 425 degree preheated oven for 10 minutes.
Peel and slice the red onion into thick slices and chop the fresh garlic. In a bowl, mix together red onion, boiled baby potatoes, the rest of the spice mix, salt, pepper, chopped garlic and 1/2 cup Florida Orange Juice.
Remove the chicken from the oven and flip over. Add the vegetable mixture to the pan. Put the baking sheet back in the oven for 20 minutes, making sure to stir the vegetables every 3-5 minutes.
Remove the baking tray from the oven one more time and pour the marinated olive mix over the chicken and vegetables. Bake for an additional 5 minutes.
Plate the chicken and vegetables, garnish as desired with parsley, mint and oregano.
