What you’ll need!


2 tbsp pine nuts

1/2 cup grated parmesan

1/4 cup olive oil

1 tsp salt

1 garlic clove

1/2 box of linguine

2 cups fresh basil

1/4 cup ricotta cheese


THEN;

1.Pick off fresh basil leaves from the stems. Peel and smash one clove of garlic.

2.Next, add pine nuts to a pan and toast for 30 seconds, moving frequently until fragrant.

3.Add water and salt to a large pot, bring to a boil. Toss in linguine (or any pasta of your choice) and cook until al dente.

4.In a food processor, mix together pine nuts, fresh basil, parmesan cheese and olive oil. You want there to be enough olive oil so the mixture is smooth and creamy. If you feel like the garlic taste is too strong, add in more basil. Transfer the pesto to a bowl.

5.Strain pasta and set aside 1/4 cup of pasta water. In the bowl with pesto, mix in the pasta and add in pasta water as needed.

6.Plate the pesto pasta and top with ricotta, olive oil, salt, pepper and fresh basil.
