Skirt Steak and Fried Eggs with Chimichurri Sauce
What you’ll need!
1 lb skirt steak
1/2 cup fresh parsley
1 tbsp fresh oregano
1/4 cup cilantro
1 -2 garlic cloves (more or less garlicky)
2 tbsp red wine vinegar
1 small fresno chili pepper
1/4 cup olive oil
4 eggs
Salt
Pepper
THEN;
1.Season steak with salt and pepper to taste.
2.Chop together fresh parsley, oregano, and cilantro. Set aside in a bowl.
3.Mince garlic and fresno chili pepper then add into the herb bowl, along with salt and pepper. Mix everything together with 1/4 cup olive oil and red wine vinegar until well combined.
4.In a frying pan, add in 2 tbsp olive oil and cook steak on high heat until each side until is charred. 3 minutes each side.
5.Remove the steak from the pan. In the same pan, crack open 4 eggs and cook sunny side up.
6.Plate the steak with eggs and pour over chimichurri sauce. Garnish with herbs as desired.
