Spaghetti and Clams
Wine, spaghetti and clams…a summer staple in the Cipoletti residence.
What you’ll need!
2 lbs of clams
1 box of spaghetti
6 garlic cloves
¼ cup white wine
¼ cup olive oil
¼ cup pasta water
2 tbsp fresh parsley
3 tbsp butter
Salt
Crushed Red Chili Flakes
THEN;
1.Place clams in a bowl of water for 20 minutes and rinse thoroughly. Add water to large pot and bring to a boil. Place in spaghetti and cook until al dente. Make sure to save some of the pasta water for the sauce.
2.Mince the garlic gloves and fresh parsley. In a large skillet on medium heat, add in olive oil, garlic and crushed red chili flakes. Once the garlic begins to brown, toss in the clams and white wine. Raise the heat to high and cover the skillet, stirring every few minutes until the clams begin to open. Stir in parsley.
3.Add in the cooked spaghetti and pasta water, mixing until well combined. After a few minutes, add in butter then garnish with salt, crushed red chili flakes and parsley as desired.
